Sautéed Leek Greens With Bacon

Save the top dark green portion of the leek plant.

Chop the leek greens and set aside.

Cook bacon in skillet until becomes crispy. About ten minutes.

Set cooked bacon aside to cool on paper towel. Break into bits when cool.

Sauté the leek greens in the remaining bacon grease and 1 tbsp olive oil.

Add stock to skillet and simmer covered for about 20 minutes.

Add bacon bits to skillet after leeks have simmered for 20 minutes. Cook for a few more minutes.

Plate the leek greens and enjoy!
