Savory Mushroom Stuffing
Start with dried bread cubes

Prep the mushrooms by cleaning the tops with a damp towel & removing stems

Chop the mushrooms & sauté in a dry pan until all liquid has been released (this takes 10-15 mins)

Once mushrooms are cooked, season & remove from pan. Add butter & cook veggies (with s+p) until soft

When veggies are soft, add wine & reduce

Once wine has reduced slightly, add herbs

Next prepare the wet mixture: eggs + broth

In a large bowl combine: mushrooms, veggies & bread. Pour in wet mixture & stir to evenly coat

Pour mixture into a large baking dish & bake until the top is crispy & the center is set
