In a heavy bottomed pan, heat 1 cup of Water

Add 1 tablespoon Oil

1/4 teaspoon Salt

Once it comes to a boil, add 1 cup Rice Flour & mix swiftly so that no lumps are formed

Sprinkle water & cover

After a minute, mix again with a wooden spatula

Turn off the heat & let it stand for 10 minutes

Transfer the cooked flour on to a wide bowl

When cool enough to handle, Grease your palms with oil & slowly knead

Into a smooth dough

Place it in a bowl

Cover with a damp cloth until ready to use

This is the Modaka Mould

Grease it with oil

Pinch a small portion of the dough

Put it inside the mould & press it against the walls to form a cavity

Fill it with a teaspoon of Hoorna (coconut-jaggery) filling

Pinch out another tiny portion of the dough

And cover the base

Take out any excess dough

Take the Modaka out very gently

Place them on a greased plate & keep them covered with a damp cloth until ready to be steamed

Place the plate inside the steamer

Close the lid & steam for 10 -12 minutes

Take them out of the steamer & let it cool a bit & keep them covered to avoid drying them out
