Rinse and pat chicken dry. Generously season with salt & pepper.

Place chicken into zip lock bag and pour buttermilk over it. Marinate at least 8 hrs (up to 24 hrs)

Once marinated, remove chicken from bag and pat dry with paper towel.

Stuff inside of chicken with lemon, celery, carrot, onion & poultry herb blend.

Tie chicken legs with cooking twine.

In a small bowl combine butter, thyme, rosemary, garlic, lemon juice, salt and pepper.
