Simple Enchiladas

1 Chopped Bell Pepper
Taco Seasoning
1/2 Lb Ground Beef
Enchilada Sauce

Tortillas
1/2 Cup Green Onion
Diced Garlic
Brown 1/2 lb beef on medium heat with a bit of oil. You can also skip the beef and keep this veg.

Get it nice & brown then pour off any excess oil.

Add 1 diced bell pepper, chopped green onions, & at least 2 large minced garlic cloves.

Sauté to soften.

Add 1 can of black beans, drained & rinsed. If you skipped the beef you can add more beans & veg.

Taco seasoning to taste. I made my own with cumin, chili powder, garlic powder, & onion powder.

Salt and pepper to taste. Keep tasting & seasoning until this mixture tastes just right to you.

Let it all come together for one more minute. Then take it off the heat.

Boom enchilada filling. If you have extra this is good to keep for tacos/bowls, salads, etc...

Coat the bottom of the pan with sauce. Ours is mini so we only needed 12oz sauce for this recipe.

Tips: You may need more sauce if you have a standard size pan. Flour tortillas are easiest to roll.

Fill tortillas with cheese & filling. I used grated mozzarella & cheddar but use what you got.

Top with more enchilada sauce. I like mine extra saucy.

Top with more grated cheese. Bake for 20-25 minutes at 350.
