Add 1 cup of sourdough starter to a mixing bowl.

Add 2 cups of bread flour or 00 flour and stir.

Add the water and stir. Add 1 teaspoon extra virgin olive oil and 1 teaspoon salt. Knead into a ball

Oil the bowl and dough ball.

Cover the dough and let sit in the fridge for 24-72 hours.

With a bench scraper cut the dough into 4 equal portions and roll into balls.

Careful stretch the dough from the inside toward the outside to make individual pizzas.

Top with a very thin layer of sauce. Sprinkle with cheese and top with pepperoni and olives.
