southwest salad with chipotle chicken
the ingredients

season 1 1/2 pounds of chicken with 1 tsp each of chipotle powder, cumin, smoked paprika, garlic and onion powders and kosher salt and 1/2 tsp oregano

sauté the seasoned chicken in 2 tablespoons extra virgin olive oil for 3-4 minutes per side

assemble the salad ingredients

place 8 cups of lettuce on a platter and scatter 1 1/2 cups of cherry tomatoes and 1 sliced bell pepper
