Southwestern Chicken and Quinoa
Prepare your ingredients.
Cook quinoa as directed on the package.
Cook chicken and half of the spices (chili powder, paprika, cumin, salt & pepper) in olive oil until no longer pink in the center. Remove to a plate.
In the same skillet, add a drizzle o oil and the red pepper. Cook 3-4 minutes. Stir in black beans, corn and remaining spices. Cook 2-3 minutes.
Add the chicken back to the skillet and heat to warm, about 1-2 minutes.
