Spinach, Mushroom, Onion Frittata
Melt 2 tablespoons butter to 10” iron skillet. Chop one onion and add to skillet

Slice carton of mushrooms with quick slice and add to onions.

Over medium heat in 12 inch skillet, 2 tablespoons garlic infused canola oil

3 oz mozzarella, 2 oz Parmesan shredded together to cover bottom of skillet. Turn off burner

Add the sautéed onions and mushrooms

Top with spinach, put the lid on wait for spinach to wilt

Combine 10 eggs and 1/4 cup heavy cream. Whisk in salt and seasonings

Pour over spinach, put in 375° oven uncovered about 22 minutes til eggs are set

When done, add more cheese on top, cover let rest while cheese melts

Yummy! And look how clean that pan is!!! Nothing sticks
