Spring Chocolate Nest Cake
Preheat the oven to 350 F.

Beat the softened butter in a stand mixer with a paddle attachment for 20 seconds.

Add 1 cup of granulated sugar and mix to combine.

Add two eggs one at a time.

In a separate bowl measure out 1 cup of yogurt and add one cup granulated sugar.

Then add 1/2 cup dark cocoa powder and 1 teaspoon vanilla. Stir to combine.

In a separate bowl add 1 teaspoon baking soda.

Then add 2 cups sifted cake flour and whisk to combine.

Alternate adding the yogurt mixture and the flour into the stand mixer. Mix on low to medium speed until all ingredients are incorporated.

Line 28 inch cake pans with parchment paper and spray with cooking spray.

Pour the batter evenly into the cake pans. Bake in the oven for 30 to 35 minutes.

Then let cool,wrap in foil and freeze for 30 minutes.

To make the nest place one sheet rice noodles into a small mixing bowl. Break them up with your hands.

Top with 1 cup melted chocolate. With you hands coat the noodles in the chocolate. Form the nest and place smaller bowl on top. Refrigerate.

To make the frosting cream together 1 cup softened butter with a paddle attachment for one minute in your stand mixer.

In 1/2 cup increments add 6 total cups powdered sugar.

With the mixer on low speed slowly pour in the melted chocolate.

Stream in the heavy whipping cream.

Then add 2 tablespoons dark cocoa powder.

If the frosting is too thick you can thin it with more cream.
Assemble the cake by placing one of the chilled cakes on a cake pedestal. Using an offset spatula spread the cake with a thin layer of frosting.

Top with the remaining cake layer. Then frost the cake with the remaining amount of frosting.

Run a fork in between the noodles and the side of the bowl to help loosen. Remove the nest and place on top of the cake.

Fill your Easter eggs with candy and place in the nest or use other chocolate egg candy.
