Strawberry, Dried Apricot and Pistachio Salad
Mix 1/4 cup olive oil, 1 diced shallot, 1 TBSP lemon, 1 tsp agave, 1 tsp balsamic vinegar reduction together. Sauté shallots for more flavor.
Using the tip of your knife, cut 6 - 8 strawberries from the wide base to the narrow top. Leave a quarter inch intact, then spread to create a fan.
Using the middle of your knife, slice 1/3 cup dried apricots into thin slices.
Peal and pit one avocado. Then, using the tip of your knife, slice the avocado thinly. Spread the sliced out.
Divide 4 cups of spring mix lettuce and 5-7 mint leaves between two bowls. Top w/strawberries, apricots, avocado, and pistachios. Drizzle w/ dressing
