1 pound for jam and 1/2 pound for bars
Strawberries
Juice of one lemon

Granulated Sugar
Place chopped strawberries, sugar and lemon juice on medium-high heat for 5 minutes

Reduce heat to medium low and mash berries

Let thicken for a minimum of 20 minutes

Swipe spoon down bottom of pot. It will be done when each side holds in place for a second.

Done! Jam separates for a second before slowly merging in

Mix oatmeal, flour, dark brown sugar, granulated sugar and kosher salt with a wooden spoon

Line 8x8 pan with parchment paper

Add melted butter to oatmeal mixture

Press half of the oatmeal mixture into pan

Scatter chopped strawberries

After jam has cooled 30 minutes, use a spoon to dollop the entire batch over strawberries

Top with remaining oatmeal mixture and bake at 350F for 55-60 minutes

Let sit 20 minutes then place in refrigerator for at least 1 hour before cutting
