Sunday Morning Cookie (Milk Bar style)
Place the Cinnamon Toast Crunch in a bowl and break into smaller pieces.

Add milk powder, sugar, cinnamon and salt. Stir to evenly distribute.

Add melted butter then stir to distribute evenly.

Spread cereal mixture in a baking sheet. Bake at 375 for 20 minutes.

Using a whisk, combine flour, salt, baking soda and baking powder.

Using a stand mixer, cream butter and sugar for 2-3 minutes.

Add egg and vanilla extract and cream for an additional 6-7 minutes.

Add your dry ingredients and mix by hand until the flour is just barely incorporated. The dough should look shaggy like in the video.

Add chocolate mini and espresso chips. Mix just enough to distribute.

Add Cinnamon Toast Crunch and barely mix.

Line a baking sheet with parchment paper. Using a cookie scooper, scoop and then roll into balls.

Using your palm, press into the cookie dough just enough to flatten. For best shape, refrigerate for one hour before baking.

Bake at 425 for 12 - 14 minutes or until golden brown. Let cool and enjoy!
