Sweet Moroccan Almond Butter Bars
Butter, 120g
Granulated Sugar, 65g
Light Brown Sugar, 70g
Egg, 1 Large

Baking Soda 1.5 Tsp
Salt, 1/2 tsp
Plain Flour, 185g
Old Fashioned Oats, 100g
Butter, 35g (for frosting)
Cocoa Powder, 1 tbsp
Soy Milk, 1 tbsp
Icing Sugar, 1/2 cup
Preheat oven to 180°C. In a large bowl, add the butter, white and brown sugar

Cream together using an electric mixer

Batter should look like this after mixing

Add egg and almond butter

Whisk for about 1 minute until light and fluffy

In a separate bowl, add flour, oats, baking powder, salt and mix together

Add the dry ingredients to wet ingredients

Mix together

Scoop the batter into a greased oven dish

Try to get the batter as even/flat as possible. Bake for 20 minutes. Be careful not to overbake

After baking, pop it onto a tray and trim the edges (optional step)

Now for the frosting. Melt the butter on medium heat

Remove butter from heat and add the cocoa powder. Whisk together

Add the icing sugar and milk and whisk together

Whisk till its smooth like this

Pour the frosting on the bars and allow it to cool slight (~20 minutes)

Chop some almonds up and sprinkle it on the frosting (optional). Slice the bars up and that’s it!
