Takikomi Gohan(Japanese Seasoned Rice)
Rice(360ml), carrot(1/2), daikon(2cm), shimeji(100g), sake(1Tbsp), soy sauce(2Tbsp), shio kombu(10g)
Rinse rice(360ml or 2 rice cups) and soak in water more than 30 mins.

Remove bottom of shimeji(1 pack: about 100g) and take apart.

Cut carrot(1/2) into small pieces.

Peel daikon(2cm) and cut it into small pieces.

Drain water in the pot, add water (360ml or 2 rice cups) and bring to a boil over medium heat.

Add sake(1 Tbsp), soy sauce(2 Tbsp) and shio kombu(10g) and stir.

Place vegetables on top, put the lid on then simmer over low heat for 12 minutes.

Turn off the heat and leave it for another 10 minutes with the lid on.

Open the lid and stir.
