Saute 1/2 an onion until lightly browned, add garlic and sauté for a minute. Remove from heat.

Add soaked and drained cashews into a high-powered blender.

Sautéed onions and garlic going in!

Add in the nutritional yeast - it adds cheesy flavor!

Tapioca starch going in! This helps with thickening.

Add the salt.

And a shake of paprika!

Add lemon juice!

Blend until SMOOTH! This can take a few minutes.

When it’s super smooth, taste, and adjust seasoning as desired.

Pour 3/4 of the sauce over the cooked noodles (I use gluten-free elbows) and stir to combine.

Add the noodles, top with the rest of the sauce and bake!
