Tomates Farcies (Stuffed Tomatoes)
Carve the insides out of the tomatoes, sprinkle with salt and set aside upside down.

Cut the stale bread into cubes and soak with milk.

Sauté onion, garlic & tomato flesh until caramelized and moisture-free.

Combine ground meat with salt, pepper, Herbes de Provence, Parmesan and fresh basil.

Add soaked bread, tomato & onion mixture and one egg.

Mix until combined.

Spoon the stuffing into the hollowed tomatoes. Arrange into a baking dish.

Sprinkle tomatoes with salt and place the hats back on top.

Bake for 1 hr and 30 minutes. Allow the dish to rest 30 minutes in the oven before serving. Enjoy!
