Turkey “Sausage” Egg Casserole
1 teaspoon
Italian Seasoning

Smoked Paprika

Fennel Seeds

Red Chili Flakes

Fresh Baby Spinach
1/2 cup
Diced Red Or Yellow Bell Pepper
2 Tablespoons
Nutritional Yeast
1/2 cup
Diced Zuchinni

Chopped Chives
Prepare spice mix: add all spices to a small bowl and mix.

Grease 8x8 baking dish.

Heat skillet over medium heat with cooking oil. Add ground turkey and cook until no longer pink.

Add spice mix to cooked ground turkey and mix.

Crack eggs into large bowl and whisk until mixed. Season with salt, pepper and nutritional yeast.

Sauté diced vegetables for 3-4 min until tender, then stir in spinach until wilted.

Build casserole by layering each ingredient: start with turkey, then the vegetable medley.

Pour egg mixture into dish and sprinkle chopped chives on top!

Bake at 350 for 35-40 minutes until eggs are set!

Remove from oven and let cool completely before slicing up. Enjoy!
