Gather ingredients: vegetables, brown rice, spices.
Shred carrots, zucchini, and yellow squash. Dice onions. Mince garlic. Remove corn from cob.
Sauté onions and garlic. Add corn, red pepper and spices.
Add carrots, zucchini, squash, and black beans. Cover and simmer for 10 minutes.
Serve with brown rice, lettuce, diced tomato, avocado, and wedge of lime.
