Vegan Chocolate Fudge Brownies
Chop 100g dark chocolate & preheat the oven to gas mark 4 / 180c

Melt 1/2 cup vegan butter with the chocolate

Add 1 cup sugar

Pour in the flax egg (2tbsp ground flaxseed & 6tbsp water mixed)

Sieve in 3/4 cup plain flour

Add 1/4 cup cocoa powder & 1 tsp baking powder

And 1 tsp salt

Mix really well

Pour in 2 tsp vanilla extract

Add in the rest of the dark chocolate (50g)

Pour into the tray

Smooth over and spread into all corners of the tray

Add 50g vegan fudge (saving 50g to place on top) & bake for 30 - 35 minutes

Cut into 12 squares & enjoy!
