Vegan Chocolate Zucchini Muffins

What you'll need
2 Tbsp Ground Flaxseed
1 cup
Vegan Chocolate Chips
1 2/3 cup
100g Flour
1/3 cup
100% Cocoa Powder
1/2 C Brown sugar
½ teaspoon of salt
1/2 teaspoon Baking Soda
1/2 teaspoon
Baking Powder
1/2 teaspoon
Espresso Powder
1/2 cup
Coconut Oil (melted)
1/4 cup
Almond Milk
1 teaspoon
Vanilla
Zucchini (medium)
Preheat the oven to 350° F

Spray the muffin pan

Next add two tablespoons of flaxseed and then a cup of water

Then shred the zucchini

Once you shred the zucchini, squeeze the excess water out of the zucchini.

Next measure out your flour and cocoa powder and sift

Next add salt, baking powder, baking soda, brown sugar and espresso powder in a bowl and mix

Then add the flaxseed, coconut oil, almond milk, vanilla, and zucchini together and mix

Now you want to add your chocolate chips and the two bowls together

Then stir it all together

Now you are going to want to get an ice cream scooper and scoop your batter into the muffin tin

Put in oven and bake the muffins for 20 minutes

Put on rack and cool for twenty minutes
