Vegan Shepherd’s Pie Cupcakes
You’ll need: Beyond burgers, mashed potatoes, frozen mixed veggies, soy sauce, vegan Worcestershire, nutritional yeast, flour, and spices.

Mix the soy sauce and Worcestershire, nutritional yeast, flour, and spices with some warm water to make your gravy.

Then, crumble and brown the Beyond burgers.

Pour in the gravy mix and add the veggies.

Simmer until the mixture thickens.

Fill a muffin tin with mashed potatoes and form them into little mashed potato cups.

Fill each cup with 1-2 Tbsp of the filling.

Top each “cupcake” with 1-2 Tbsp of mashed potatoes, sealing the sides as needed.

Bake for 40-45 minutes until the tops are golden brown. Let cool 10-15 minutes before removing and serving!
