Vegetarian Enchilada Casserole
Heat olive oil in large sauté pan. Add onions, garlic, sweet potatoes, bell pepper, salt and pepper. Cook until softened.

Add grated zucchini, green chiles, diced tomatoes, chipotle pepper beans & corn. Stir to combine.

Add spinach and chopped cilantro. Stir and cook until spinach is wilted.

Spread enchilada sauce on the bottom of a baking dish. Layer with tortillas and then veggie mixture. Top with shredded cheese.

Repeat with another layer of enchilada sauce, tortillas, veggies and cheese.

Bake for at 350 F for 30 min until cheese is melted.

Serve with sour cream, fresh cilantro and avocado 🥑
