Stuffed Acorn Squash is a delicious vegetarian option for your holiday table.

Gather and prep your ingredients.

Cut the squash in half, and scoop out the seeds.

Brush with avocado oil, sprinkle with salt and pepper, and roast at 425 F for 20 minutes.

Make the stuffing while the squash is roasting.

Sauté the mushrooms, onions, and apple until softened.

Add the garlic and seasonings, and stir well to combine.

Add the rice, almonds, and Parmesan cheese. Finish with a squeeze of lemon juice.

Remove the acorn squash from the oven, and divide the stuffing between the two halves.
