Veggie Crunchwrap (Using Tortilla Folding Hack!)
Let's make a healthy veggie wrap using the tortilla wrap folding hack!
Chop a handful of baby spinach, 6 shiitake mushrooms, and 5 Kalamata olives.

Add mushrooms to small pan with 2 tbsp veggie broth and a pinch of truffle salt. Cook on medium heat for 5-7 min.

Slice halfway through the center of the wrap (I used a coconut flour wrap)

Add cooked mushrooms to upper right quadrant, raw spinach to upper left quadrant, 1/4 c vegan mozz and olives to the lower left quadrant.

Fold the blank quadrant over the mushrooms, then continue to fold each until you have a small wrap

Place wrap on panini press or non-stick pan. Cook until both sides are golden brown.

Transfer to plate and enjoy!
