Cut the watermelon.

Blend the watermelon on high. If you need to you can add 1/4 cup water.

Strain the watermelon pulp through a fine mesh strainer.

Place the juice and sugar into a saucepan and bring to a simmer over medium heat.

Cook the juice and sugar until sugar has dissolved, about 7 minutes.

Zest 2 limes. Rotating along a microplane to only get the bright green part.

Juice the limes.

Place the juice in a bowl and add the lime juice, zest and a salt. Refrigerate for at least 4 hours.

Add the cold juice mixture to a frozen ice cream machine insert and turn on for 15 minutes.

When the sorbet is done it will be slightly frozen. Place in a container and freeze for 4 hours.
