Yummy Homemade Lemon curd
Cast of characters: 1 tbs finely grated lemon zest, 1/2 cup fresh lemon juice, 5 eggs, 1 cup sugar, 1/8 tsp Kosher salt, 1 stick butter

Blend everything except butter for 6 minutes to 170 degrees in Cooking Blender

Once contents reach temperature...add butter tablespoon by tablespoon blending 10 seconds after each addition of butter

After blending for an additional 3 minutes....pour into heat safe bowl and chill. Curd will thicken as it cools
