Used my spiral and slice to slice 1 zucchini.

Sautéed in 1/2 tbsp of olive oil for about 5 minutes.

Used 8 eggs (that’s all I had) and added a splash of milk.

Add 14 chopped turkey pepperonis (equal to one serving) and a 4 oz container of feta cheese.

After zucchini has cooled slightly, add to egg mixture.

Used my large scoop to scoop into muffin pan. (I used my old stoneware pan, but any will work. )

Baked at 350* for 22 minutes.

Served over leftover quinoa.
